Breakfast - Foul (Ful) Moudamas

Cookbook creator says: I LOVE this! Discovered it during our month in Jordan & Egypt. After a week of the "Continental European" breakfasts, I was ready to quit walking past the big vat of Ful Moudamas that was ever present in the dining room. Finally tried it. The staying power is awesome - I wasn't hungry for hours!!Submitted by CIOUID

Persian Greens, Herbs and Eggs - Kookoo Sabzee

This is a staple in our vegetarian home. It's also a super healthy dish that I always know my 2 yr old will eat. The recipe below is basic. Normally, you would have more herbs. I usually use a mix of whatever herbs and greens I have on hand - parsely (fresh), mint (fresh or dry), chives, collards, kale, even dandelion greens from my lawn. Just be careful with too much kale or dandelions, as it can make it bitter. This dish is great cold the next day also and is traditionally served with dairy - goat's cheese, sour yoghurt, feta, etc.Submitted by HEALTHYNILI

This is one of my favorite recipes for preparing fresh greens - beet greens, mustard greens, chard, collards, what have you. It is simple and delicious - and really nutritious - as long as you incorporate all the water from cooking the greens back into the dish.Submitted by HEALTHYNILI

Easy to Make Lebanese Baklava Recipe

Baklava, aka Baklawa is a Middle-Eastern dessert whose origins may go as far back as B.C times to the Assyrian civilization. Through the centuries, many neighboring countries adopted the delicacy and created their own versions. Today there are dozens of types of “Baklava” grouped in Lebanese Cuisine under “Arabic Sweets”. In its basic form, Baklava is made of fillo dough, nuts, and sugar syrup and in this post, we’re going to feature a simple recipe of walnut Baklava “fingers.”Submitted by LEBANESEKITCHEN
