This recipe is adapted from a Redbook magazine recipe my mother found in the 70s. I've added more vegetables to the original choices. It's a family favorite and very healthy.

I make fried rice quite often - any time I have leftover cooked rice, actually. This time I also had a leftover pork chop, but you can leave it out of course. The vegetable amounts are approximate, I just use what I have.Submitted by WILDTURKEY101
