Spaghetti squash topped with a warm and robust easy skillet bruschetta. This is so simple, but so delicious! The bruschetta topping is also just as delicious on crustini or over whole wheat/grain pasta. This TECHNICALLY makes 4 servings, but to me it's two...and without the guilt! Cooking time varies depending on the method you choose for the squash - I suggest taking the extra time to bake it - the texture is drier and, in my opinion, much better.
