My tip is to weigh the potatoes. The recipe calls for three pounds, so don't guess.... "well there's 10 potatoes in this 5 lb bag, so divided by 5 equals 2 potatoes times 3 equals 6 potatoes".... don't do that! That is calculus, not cooking! The consistency of the potato mixture before you cook it should be a little runny and if you use too many potatoes it won't work right.Submitted by AWLASS
Lighter version of the pot luck favorite.
Best if refrigerated overnight.
So pretty when served in glass, or trifle bowl you will have to take the 1st serving at a pot luck, or no one will want to mess it up.Submitted by TOUDLES
These are so good - you eat the skin and all - they are crunchy, chewy, and very satifying. I have modified the recipe for cooking just 1 sweet potato, which is supposed to be 1 serving, but it actually serves 2 pretty nicely so nutritional info is based on 2 servings.Submitted by JADARR
My whole family loves these! Although they may seem small (considering the size of muffin we can get in a bakery) but we always add a helping of fruit or yogurt for breakfast. Yummy!Submitted by CHICKLET14580
An Italian favorite gets a below the border twist. Chef Meg made just a few tweaks before giving this one her seal of approval! She adds the spices early in cooking to help boost flavor and added a full pound of turkey for a more filling meal. Submitted by CHEF_MEG
