This recipe comes from the web site Eat Better America, which is run by General Mills. I altered it slightly by using fresh sugar snap peas, more broth, and a half cup of cashews (the original 1/4 cup just seemed too skimpy). I also reduced the cooking time for the veggies so they would be crisper and I added the cashews with the onions.
My husband and I both loved it. My 5 yr old daughter, not so much.

I love Chili's Southwestern Eggrolls. They have so much tasty stuff in them, but I hate the fact they are deep fried. I added more beans and corn and then put them in the broiler for crunch.
These are great made ahead of time and *frozen for a quick meal or a fun snack for the big game. I make a double batch so I can freeze some for later.Submitted by RONDARC
Olive Garden has a tempting Chicken and Shrimp Carbonara, but it has over 1400 calories and 3 grams of sodium. With stats like these, I could only afford a tiny taste and I want to enjoy the whole dish.
While the original dish has shrimp, I want to simplify the preparation by limiting the proteins. Ronzoni Smart Taste pasta is a good compromise between whole grain pasta and white flour pasta.
