Although the cooking time is long, most is for caramelizing the onion (40-50min). The process doesn't require constant attention. You can also just saute the onion for a few minutes. I found this recipe on Delish and knew I wanted to make it, but after I visited the produce section and saw all the beautiful spaghetti squashes I decided to adapt the recipe. This makes four GIANT main-dish servings because spaghetti squash is so light, but you could easy serve six out of it. It combines spaghetti squash, ricotta, marinara, spinach, cheese, and spices.Submitted by RACHELMARLENA

Great way to enjoy Alfredo with a fraction of the calories!
This is truly amazingly awesome - tastes like a lasagna without all that layering. It is a bit of work but is worth it and great for entertaining. You can also make 2 and freeze one up for later. The original recipe called for regular spaghetti but I substituted a spaghetti squash to lighten it up. Mixed with all the cheeses you do not notice the difference.
