Although the cooking time is long, most is for caramelizing the onion (40-50min). The process doesn't require constant attention. You can also just saute the onion for a few minutes. This makes four GIANT main-dish servings because spaghetti squash is so light, but you could easy serve six out of it. This is truly amazingly awesome - tastes like a lasagna without all that layering. It is a bit of work but is worth it and great for entertaining. You can also make 2 and freeze one up for later. The original recipe called for regular spaghetti but I substituted a spaghetti squash to lighten it up. Mixed with all the cheeses you do not notice the difference.
