You may substitute almond or cashew butter. You can get down and dirty and use your hands to mix if you don't have a food processor. Consider rolling in shredded coconut or flax seeds or cocoa powder or cacao nibs. Savor this treat. It's a keeper!!! And you can eat them raw or baked!!!Submitted by BRAVELUTE
Cookbook creator says: The photo doesn't do this salad justice. Easy to make. Originally, I made it for a 4th of July picnic. But I use it for any occasion now. Cabbage can sub for bok choy, but you should try it if you are new to it! Slice across the steps like you would celery. It is amazing how it absorbs flavors.Submitted by BRAVELUTE
Cookbook creator says: My answer to not being able to slice eggplant thin enough to make rolls. Process and make a textured sauce that chews like a meat sauce. I didn't like the bean pasta I used in the picture. But it does make a great dip for artichoke leaves or other veggies.Submitted by BRAVELUTE
