Low-fat buttermilk and applesauce help lower the fat, and the whole-wheat flour and flax seed add fiber. These healthful muffins freeze well!Submitted by CHEF_MEG
This is a great recipe for summer, when you have a surplus of zucchini in the garden. Double or triple the batch and freeze them for quick and healthy breakfasts.

This comes out so moist, and you cut out most of the fat using applesauce.Submitted by MAGGSR74
Preheat oven to 350 degrees F (175 degrees C). Grease muffin cups or line with paper muffin liners.
Mix together flour, baking powder, baking soda and salt. In a separate bowl, beat together banana, sugar, egg and vanilla. Stir in the yogurt (I've used applesauce when out of plain yogurt as well). Stir banana mixture into flour until just combined. Scoop batter into prepared muffin cups.
Bake in preheated oven for 15 to 20 minutes, or until a toothpick inserted into center of a muffin comes out clean. Let cool before serving. Submitted by VBALMER
My whole family loves these! Although they may seem small (considering the size of muffin we can get in a bakery) but we always add a helping of fruit or yogurt for breakfast. Yummy!Submitted by CD4766443
This is the blending of two of my favorite low calorie muffin recipes. I wanted something larger, more substantial, but didn't want to add too many more calories. These muffins are not too sweet, high in fiber, and practically fat free. For those counting WW PointsPlus, they are three WW PointsPlus. If you like a sweeter muffin, you may consider increasing the sugar or adding packets of your favorite sweetener.Submitted by WKABAN
