Veg Casserole /w Cream of Asparagus
Simple and quick Vegetarian casserole that is relatively healthy. You can make a slightly lower calorie version by reducing the cheese or using fat free cheese and substitute butter with I Can't Believe its not Butter. You can also reduce the amount of stuffing mix used if you prefer a lighter version (i.e. only use the crumbs to cover the bottom).
