Carrot Cake Cupcakes Recipes

Low sugar alternative to the real thing. Great for those of us with a sweet tooth.

I omitted the icing and added raisins and included Halle's optional walnuts for a muffin with the taste I was looking for. I also substituted pure stevia extract for the Steviva Blend (stevia and erythritol) that she uses. We also omitted the cupcake liners, as they always seemed to stick to the muffin and they turned out perfectly without them.

I substituted orange zest instead of lemon in the icing...SO GOOD!!

These moist, tasty cupcakes are only 162 calories! Of course, adding frosting will make it a bit more...

Took the Betty Croker carrot cake recipe & used Applesauce instead of oil. I did use a 1/4 cup canola oil.

Carrot Cake Cupcakes made with almond flour

I've altered a recipe from my Tupperware catalog to make it a little healthier. The original recipe calls for their Cinnamon-Vanilla spice blend, but I've used regular cinnamon and vanilla in this recipe to make it feasible for everyone. It is good either way.

This recipe makes alot! You can chill any extra batter in an airtight container for up to 2 wk. This cake freezes very well also so if you want to bake it all off you can freeze the extra.
Servings: 60 reg. cupcakes-3/4 full
I use it for cupcakes. They freeze well and last a long time when sealed properly. This recipe makes 1 half sheet carrot cake, 4 -9" rounds, or several cupcakes (60?)
