Tomato, Feta, and Chickpea Salad
A super-easy, delicious summer side salad. Make sure you use fresh-squeezed lemon juice!
This salad would be perfect served with a crusty bread, and is great for parties or a quick dinner. You could even mix in a little more olive oil for sauteeing or roasting (350 deg C for 30-45 minutes before adding the feta, lemon juice, and half the fresh herbs).
