Cream Broccoli Recipes

Hubby's famous broccoli soup! Sprinkle cheddar cheese on top for something extra (not included in nutrition).

Don't purée this soup, but chop it up instead. Let your teeth get some exercise and leave the fibers intact so the low glycemic index of this soup satisfies your hunger longer.

Lyn-Genet claims this is a protein rich soup, but doesn't seem to be. However it is rich in healthy fat.

The soup is low in calories and fat and is simply Delicious.

A wonderfully yummy soup recipe that is very filling.

Just one serving of this creamy soup contains 1 serving of vegetables, 1 serving of milk, 4 grams of fiber, 17 grams of protein, and more than a day's supply of Vitamin C. One serving equals just 2 Weight Watcher's points. It can also be made to fit a Zone 40-30-30 diet plan*.

I modified a recipe I found on allrecipes.com to make it lower in sodium and fat. My husband loves it as do I :) He adds some freshly grated Parmesan cheese whereas I like it as is.

Soup

It's a little thin but i usually heat this up over a bowl of fresh spinache and by the time you get to the bottom of the soup the spinache is nice and soft. There is also spinache in this soup but don't tell my husband he hates spinache. lol

If you have a Blendtec or Vitamix, this soup is easy and healthy. And it tastes like it has cream in it, but it doesn't.

Adapted from Moosewood Cookbook

Cream of coconut is used to replace the cream and flavored with curry spices to make up for the lack of cheese. Useful for making use of broccoli stalks, having removed the crowns for another purpose.

Eat This Not That

This recipe is a modified version of the found in The Plan by Lyn-Genet Recitas. Spices are a starting point and you can adjust to your taste (omit curry and or herbs de Provence), add more pepper or cumin, whatever sounds good to you! Taste the final product and adjust spices from there.

My variation includes optional ingredients for additional protein and fiber.
