Moroccan Lentil Soup
This isn't my recipe- I found it online. I always add more spices.
1. In a large pot, saute onions, garlic, and ginger in olive oil for about 5 minutes
2. Add all of the other ingredients. Boil for a few minutes then simmer 1 to 1 1/2 hours or more (until lentils are soft)
3. Optional - Puree half of the soup in a food processor or blender. Return to pot.Submitted by: INTHEAEROPLANE1
