Vegan Sweet Potato Casserole (aka, Pie as a Side Dish)
This tastes like the love child of a pumpkin pie and a fruit cobbler. It's a hearty, healthy, and low fat side dish or dessert. It's pretty high in carbs for my tastes, from the oats and wheat flour, so I like to pair it with a lower carb, higher protein main dish and a generous helping of steamed kale. Can you tell i'm from the south?
