This is a soup I make every other week during the cooler weather. It is a great "go to" meal for me. Easy to grab and warm up and very filling and satisfying. My husband prefers some chicken or turkey tossed in.

Colorful Stuffed Peppers

Red and yellow peppers tend to be "sweeter" than the traditional green bells. When my 9 & 3 yo kids asked "What's for dinner?" they were not pleased with the answer. However, they were surprised by the new colored peppers and ate every bite without complaint!
