Ever since Freshii opened downtown Dallas, I have been fascinated by the menu. They have started offering Fresh Made Juices with no add-ins. At $5.99 per 16 oz. I could not wait to duplicate this at home in my Jack Lalane.

Here lately, I have been really lazy about making breakfast. I found an alternative that I not only like but is budget friendly. WE have a cafeteria downstairs, I use to order this as a Omelet and it would ring in at over $6—I started ordering the same thing, but scrambled instead… Barely $3. I use as many veggies as I can, and skip the cheese. This fills me up, and I stay full well into the afternoon hours. Decided I needed to check the nutrition and see how it weighed in, I was very pleasantly surprised.

Getting a bit bored with storebought and premade. I like to cook. So here is a hearty Italian favorite that meats guidelines even under the 200 cal. per serving mark.
I have this thing for comfort food; but comfort food usually means very heavy in calories; fat; and a flavor. On a quest to have what I like and make it healthier for me and the family. Here's my spin on a feel good classic. Unless I have a bumper crop of fresh tomato, I use the can version because it is cost effective and you can still get a quality sauce.
This recipe is not quite as healthy as its Chicken Street Taco Counterpart. However, it still can be implemented and enjoyed as an occasional treat. Crockpot cooking allows us to use cheaper cuts of meat; however; there is a cost! These meats are denser, and have a higher calorie and fat count. So be sure you choose wisely. For this recipe (photo) I used a 3 lb. Beef Round Roast and froze the additional servings for a fast dinner later.

This is Wonderful. JM recommends you slice the veggies with a veggie slicer creating a ribbon type effect. Very pretty when plated. However, I am a women who is never done, so I used the Veggie Slicer and sliced them into Ridged Ovals. Not as pretty, but a whole lot faster. Also, there is a lot of room to play here. If you have a market like Sprouts, they make over 15 varieties of chicken sausage daily. I used a Hot Parmesan Chicken Sausage and a Basil Chicken Sausage. Just go with the flavors you like. I also used Canned Tomato’s vs. Fresh because it was faster and the Seasoning is included. If you decide to omit, keep in mind you will need addtional seasoning or this will be bland.
This recipe leaves out the bacon, onion, and cheese. Use 1/4 c light ranch salad dressing and 2 lbs of potatos.
Marinate chicken in Ranch in fridge for 30 min.
Slice potatos in half, cook on baked potato setting in microwave. Layer in with chicken. Bake 350 for 50-60 min until chicken is done

A healthy spin on a classic comfort food. I do not add any fillers like bread crumbs or cheeses. If you would like to add a flavor enhancment, add fresh grated parmesan cheese. The seasonings of the Chicken sausage make this perfect everytime. Growing up, my mom would let me have a whole bell pepper! Now that I am older and understand the need for portion control, I accomplish this by slicing the bell peppers directly in halves.
