I had been hunting for a good crustless vegan quiche recipe and ended up combining everything that I read online with my own imagination. It turned out quite well!
This was adapted from an almond chocolate cup recipe Angela Liddon posted on her website: ohsheglows.com.I attempted to make it lower calorie and lower fat.
Sometimes it is just fun to remake the junk food you ate as a child in a much healthier way. This recipe is sans refined sugar and all of the chemicals traditional Pop Tarts contain.
I decided to make a plain oatmeal bar recipe since I tended to add my own fresh fruit and nut/seed butters to the ones that I had been making with dried fruit for breakfast.
I modified an awesome recipe for veggie burgers that my best friend and fellow vegan gave me. It blew every other recipe I had clean out of the water!
This is my all time favorite recipe to batch cook and freeze. It's perfect for those chilly winter nights and full of veggies!
