Cheesy Chicken Enchilada Casserole
This is a hardy, filling casserole that's not too hard on your calories :) Makes 8 nicely proportioned servings.
Chicken Corn Soup, 4 servings (by LOXASHA)
An old recipe handed down to me from my mother. Just add chicken, corn and egg noodles with a bit of salt and pepper to taste. Great for cold weather days!
Poor Man's Chicken Pot Pie Soup
A sort of soup that has large, square flour noodles, potatoes and chicken. An old recipe handed down in my family for generations, called Poor Man's Pot Pie, since it's made with kitchen remnants. Originally a Pennsylvania Dutch recipe, I believe.
