Combo Pizza Casserole (lo carb)

I was making pizza caserole one night for my family and REALLY wanted in on the deal! So i reserved some of the meat and pulled out my weekly veggies and came up with this lil' dealo!

Kara's Kabbage Kasserole

I took several recipes and tweaked them to suit my lo-carb needs :) This bad boy has 6.8 net carbs and a little over 300 cal for a decent sized serving. The cabbge is quite filling and since it uses heavy cream it has such a comfort feeling :) You could change the heavy cream to skim milk and the egg to egg sub if you are watching calories.

Ranch Cabbage Chilli

I found this recipe here on spark and altered itbased on what I had on hand and my my family loved it!! It's full of protein and fiber, low in calories and uses an ingredient that I just happened to have on hand but had never actually tried....ranch style beans!

"Accurate" Mozzarella sticks

I modified a recipe i found here on SparkRecipes so that I had exact quanities for the NI :)

Basic Muffin Recipe

This is a good recipe to be used as a base. It can be altered however you would like. I added coconut to mine and it is included in this recipe as i needed it for the nutritional info. However have fun with it!

Zucchini Lunch Burrito

This is yummy, and REALLY filling, i believe that is because it contains beans and zucchini rather than tomatoes and beef.....mmmmm good!

Horeradish Egg Salad for Sandwhiches

Smash up boiled egg yolks, add horsradish and mayo, stir into a cream. Chop up egg whites and add, stirtogether well. Eat on bread...yum!!
