Breakfast Casserole

This is very quick to prepare before bed, especially using Jimmy Dean pre-cooked turkey sausage crumbles. Sometimes, I add some crushed red pepper or diced jalapeno, to give it a kick. I pop it in the oven before my shower and its ready by the time I am. It allows me to have a real breakfast even during the middle of the week. And it doubles nicely for company in a 9 x 13- inch baking pan!

Chicken Poblano Enchilada Casserole

I serve this with chips and salsa because it needs the crunchy element...

If you don't have time to roast the poblano, just dice it up and saute with the onion. If you don't want to use rotisserie-cooked chicken, 6-8 oz of boneless, skinless chicken breast works as well. This doubles beautifully into a 9x13 dish.

Chipotle Chicken Taco Salad

This is adapted from a Cooking Light recipe and is perfect for a light summer dinner. I serve it with tortilla chips to add some salty crunch (not included in the nutrition info).
