Chunky Vegetable Quinoa Salad

I got this recipe from Good Housekeeping's Family Vegetarian Cooking, but substituted Quinoa for Bulgur and Butternut Squash for Summer Squash..and Regular Onion for Red Onion, so yay..kind of change a lot but it was still SUPER tasty!
