Kelly's Risotto base

A very basic risotto recipe to make ahead. Freeze this tasty gem and always have something on hand to prevent the "But we have nothing to eat here" problem causing well-meaning people to go out to eat. Toss in your choice of meat and/or vegetable to make a great meal that stretches a tight budget. (I made 4 servings for about $6 - less the cost of wine, which was on hand)

This recipe calls for 1/4 cup white wine. This can be removed for those with restrictions. If you replace it with 1/4 cup water, the nutritional information does not change.

(West of) Salisbury Steak

This healthy twist on the traditional comfort food is made in a crock pot. If you use frozen and/or canned veggies, the prep gets cut to under 5 minutes, so you can be out the door in no time and come home to a wonderful dinner!

The remaining gravy goes amazing over potatoes or egg noodles on the side!

V8 vegan chili

This protein packed chili is low in fat and is a wonderful vegan option. While I experiment with different types of V8, the low sodium option is my favorite... it lets me play with spices! Feel free to play with different kinds of veggies and legumes. I like the black beans to give a little southwestern flair and contrasting color.
