Buy most ingredients in bulk from the healthfood store and save money. This is soooooo quick and sooooo easy, not to mention absolutely delicious. I got it from one of my favorite regional mags..

Pork & Carrot Curry

1. Combine first 10 ingredients in a bowl, cover and refrigerate for 1 to 24 hours to marinate.
2. Sautee onions in olive oil for 1 minute on low heat, stiring often. Cover and continue cooking, stiring often until onions are soft but not brown, about 5 minutes.
3. Add tomatoes, potatoes and carrots and 1/2 cup of water. Increase to med. heat. Cover and simmer until meat is done and vegetables are tender, about 25 minutes. Ladle into bowls and garnish with cilantro. Makes 4 servings.
