Gina’s Home Made Low-Fat French Toast

I was looking to create a sweet breakfast treat for the weekends. If you can get away with just 1 tablespoon of maple syrup, you'll be ok! You can easily substitute the bread for (or any other ingredient for that matter) a gluten-free kind and turn this into a gluten-free recipe. Enjoy!

Low-Fat Home Made Chunky Guacamole

This version of my famous guacamole is without the olive oil. For ease of calorie calculation the ingredient 'Hass Avocado' shows up as 10 oz. of avocado; however, each medium avocado should be about 5 oz. Therefore, you may simply use 2 medium ripe Hass avocados. Enjoy!

Homemade Cilantro & Mango Salsa

This great homemade salsa can be enjoyed not only with tortilla chips but also on top of grilled chicken breast or even salmon. Enjoy!

Banana Chia Seeds Oatmeal Breakfast Squares

This is what happens when you have too many bananas going ripe on you! This wonderful recipe idea 'sparked' on me just when I was about to have breakfast this morning. Not only is it low in fat, but also it is packed with protein, fiber, and calcium. It is a great way to start your day. Need more protein? Substitute 1/2 the flour with one scoop of protein! Enjoy!

Fiber Rich South-of-the-Border Fajita Stew

This recipe ‘sparked’ in my head out of necessity! Sometimes at the end of the day, with the help of my Nutrition Tracker, I realize that I need more fiber on that day. This is my answer to this dilemma; this recipe is not only high in fiber, high in protein, moderately low fat, and quick and easy, but it is also a great way to end your day; it could make a great lunch dish as well. It yields a portion for one, but it can be easily doubled if necessary. I would love some feedback! Any suggestions?

Low Fat & Protein Rich Chicken Fajita With Homemade Pico de Gallo

Healthy, high in protein, low fat, and quick and easy! This is a great way to end your day. Not only does this recipe make a fantastic dinner for one, but it can also be a weekend lunch. I would love some feedback! Any suggestions?

Banana Nut Oatmeal Protein Muffins

Healthy, sugar-free, with a kick of energy-boosting protein to start your morning right! This is not a super-sweet treat but rather a solution for those who like their coffee with a carb-like accompaniment. I would love to get feedback! Any suggestions?

Quinoa Veggie-Rich Salad

Wonderful and tasty salad, shock-full of veggies!
Do try to use all fresh and chopped ingredients.
