Low-fat Migas

I love Migas, which is a Mexican egg dish that is insanely popular in Central Texas, but it's not very healthy, so I came up with a great alternative. Traditionally, they are made with tortilla chips scrambled in with the eggs (added right at the end), but I leave those out since I have cut fried foods out of my diet.

Tomatillo Avocado Salsa

I haven't tried this recipe yet.

Low Fat Cranberry Orange Scones

These are not overly sweet, and go really nicely with a cup of hot tea.

You can make these scones vegan by using almond or soy milk. It will change the nutrition facts slightly.

Eggplant Bolognese

I modified this from a Whole Foods recipe. Original recipe calls for mushrooms, which I don't care for, so I subbed zucchini. Very satisfying meal when served over spaghetti squash or pasta.
