You will need:

Not barbecue as in shrimp-on-the-barbie. This is shrimp sauteed in butter and served in a spicy broth.

Eileen's Chili con Carne

My own variation on chili with kidney beans and lean ground beef. If I have some in the freezer, I will substitute my own tomato puree for the canned crushed tomatoes and omit the tomato paste.

Eileen's Chicken Breast Parmesan

Chicken breast breaded with Parmesan cheese and bread crumbs, then sauteed in butter and olive oil with garlic.

Eileen's Vanilla Flan (one serving = half cup)

Traditional flan made a little lighter with 2% milk. I don't recommend skim milk because the custard does not set properly. You can use individual custard cups or a two quart casserole dish. Best made a day ahead of time.

Eileen's Southern Italian Meatballs

Italian meatballs just like grandma used to make. I use half pork and half beef to keep them moist and tender, but you can use all beef if you prefer.
