Mexican chipotle Quinoa

... I put everything into the pot (accept the yougurt, spinach and avacado) bring to a boil then simmered on low heat for 15 mins. let it stand for 5 mins. At the end throw in a cup of spinach and stir until the spinach wilts. then top with avacado and yogurt
