Wheat Berry Risotto

Saw this being made with Farro on a cooking show. Could not find Farro and decided to use wheat berries instead. My wife who is not a big wheat berry fan did comment about the good flavor. Considering the majority of the alcohol has been cooked out of this, I do believe the calculated calorie count is higher than what it really is.

Quinoa Summer Salad

Lentil Shepherd Pie

Delicious, hearty, low fat, low sodium and tasty meatless version of Shepherds Pie. The lentils make this a hearty dish that is filling and fulfilling. If you want to cut the portions, you can easily make this into 8 servings, then calculate for 3/4 of a serving.
