A little something I threw together this afternoon. It turned out amazing! Try it without tuna salad for an even healthier version!
This is a recipe I came up with the other day. I had it for lunch, but it would make an excellent course for dinner as well. The calories in this meal aren't going to be as much because I couldn't find the exact ingredients needded. 2 eggs for example are only used for the wash of the sliced eggplant and won't be completely used.
I found this recipe from the book 'The New American Diet' and tweaked it a bit to suit my tastes. It's a definite must if you love oatmeal! Try adding sliced almonds, raw pumpkin seeds, or cinnamon for boosted flavor.
