A very refreshing & versatile dish, either as a side salad, snack, or dessert. Any fruits can be used.
Leaving the skins on the sweet potatoes retains the vitamins & fiber, & lightly wilting the kale retains the vitamins & gives the dish some great texture.
If you need something quick, this is it!
The use of store-bought items such as steamed lentils and packaged loose-leaf kale (Trader Joe's), and Hunt's petite diced tomatoes in juice really helps get this chocked-full-of-goodness stoup on the table in quick-time. Serve with a warmed crusty bread to hit just the right spot on a blustery evening.
