Serves 2 for breakfast
Using Mexican style shredded four cheese has a bold flavor enabling use of less cheese in the omelet. Break eggs into a bowl, whip with 1/4 cup or less of mild, and pour into a medium hot skillet using cooking spray rather than oil. Makes a great flavorful cheese omlet.
Wisk eggs and milk, begin cooking, add cheese, sausage crumbles, and chopped green bell pepper prior to folding and turning omlet.
Great dessert or breakfast--we make it with whatever fruit is available and often make a large batch to serve at the homeless shelter! It goes over like you were serving ice cream!
