Quickie apple-peanut butter puree
Post hernia surg, I need something that goes down easy that is savory and not sweet to get in some protein. I can't tolerate ANYthing even remotely sweet and this fits the bill. It is easily customizible and I'm having a hard time keeping my family from eating up my soup. I make this up and keep it in the fridge to dip out a portion into a measuring cup and then sip from that.
Cook the quinoa until there is no water left.
Stir in the chopped veggies. Add jalapeņos, if you want.
Stir in everything else except the oil.
Coat pan with oil.
Drop by spoonfuls in the pan and cook on medium heat on each side 5 minutes or until browned.
Makes 25 cakes.
Bring to a boil and cook on medium low for a couple of hours. (I like to start it cooking on my lunch break and leave it on the stove on barely simmering with lots of water to be ready when I get home from work.)
