** To make things go a little quicker in the morning, if you are trying to get out the door, separate the eggs and toss the spinach with the garlic the night before. You can have your food done and ready to eat by the time you done making your coffee ;)

Great side or topping for you favorite Mexican dish
This recipe was inspired by one that I found in October's issue of Cooking Light. The original called for brie and arugula, but I adjusted this to my liking.
Traditionally a very simple, yet flavorful Italian pizza constructed of dough, tomatoes, garlic, basil, mozzarella, olive oil, & sea salt.
In this recipe, I've taken the liberty of adding crumbled feta cheese, simply because I ♥ feta on pizza :)

I've been making my tuna fish sandwiches like this since I was a kid. I have always despised mayo, so this is a great alternative if you're trying to cut back or you're like me and hate it.
OMG! This is sooo good. Seriously! Myself and my kids inhaled it. We had it for lunch with some crackers and a side of carrots! Awesome!
The Ranchero Sauce is a seperate recipe. Make the sauce, chop the veggies and store in sealable containers to make breakfast a snap. Don't be discouraged by the calorie count, with this recipe and the Ranchero Sauce recipe the total calories are 355.4, but remember... That includes all condiments such as sour cream and corn tortillas and is made with a whole egg. Just keep in mind that this is a complete meal. Not necessary to add anything to the meal. Your personal substitutions can lower that calorie number as well.
