I didn't include the tortilla, so you can add in your own. I used Trader Joe's Refried Black Bean with Jalapeno. If you use plain refried beans, I would include 1 Tbsp pickled jalapenos.

She used seasonings like cinnamon and ginger. I wanted it to be neutral, so I left these out.

Slightly modified from Eating Clean. Their recipe uses unsalted almond butter and 1/4 tsp sea salt. I substituted salted peanut butter for the unsalted almond butter. I used coconut sugar instead of sucanat and reduced it to 1/2 cup.
These are very moist, filling muffins. The peanut flour adds a lot of protein. The sugar has been cut in half from the original recipe and could possibly be eliminated completely because the banana adds a lot of sweetness.

This is a slightly modified version of RawPriestess' recipe. They're really good and chocolatey without all the refined flour and sugar. It's almost more like fudge than brownies. I realize it sounds strange, but they're really good.
You can make this healthier by using whole wheat flour and leaving out the chocolate chips. They have a very moist, fluffy texture.
This recipe is from the Outsmart Diabetes Cookbook. They have it as a pancake recipe, but I prefer waffles. The whole wheat pastry flour makes them light and fluffy, not at all gritty.

This tastes a lot like pumpkin pie. The cottage cheese gives it a fair amount of protein without altering the taste very much. It smells and tastes wonderful.
This is a very filling breakfast. Sometimes I throw in a tablespoon of ground flax as well. It's good enough to be a dessert!
I'm surprised by how good this turned out. If you prefer, you can mix both packages of pudding with the pumpkin. I prefer the layers.
