Hearty vegetable pasta sauce with an added bump of protein from green lentils.
Loving, hearty filling soup
as see on the Post Punk Kitchen webside, within the Portland Porch Wraps recipe. I love this on almost everything. I had to guess a little at the oz to cup translation for the beans, so this is approximate.
I used nettles, not spinach but could not find nettles in the database. This would work well with pretty much any green, I guess.
This is a thin snack/started soup, needs more with it to be a whole meal.

Simple, easy to make soup. Great as a snack of as part of a larger meal. There's just enough potato in this to make it creamy without adding millions of calories.
It will need some extra dressing of some kind. I just made this up to use what's in my veg delivery.
I'm guessing it would be nice with some avocado too

Gorgeous dressing for your bowl. This is only for the sauce, I didn't track the data for everything else as I know I will change it according to what I've got on hand.

The books states to roast the squash then stuff it, but mine fell apart so I filled four individual deep pie dishes instead. Every recipe I've made from this book has been great, I would recommend it to anyone. Most of the recipes in it are much quicker than this one and simpler too.

Taken from PPK website. I'm sure that there are ways to make this lighter, but I wanted to see what the nutritional data would be as it stands. I'm sure that this will be delicious enough to justify making my other meals of the day lighter.
