Feel free to substitute whatever veggies you want! For example, mine has 3 mushrooms in it because that was what I had in the fridge!
Delicious and fibre-filled cookies. Very good for when you're constipated, not even kidding!!
The "roasted" part of the recipe comes from including the roasted seeds from the acorn squash - I don't, personally.
