Yes, it does use a raw egg for protein and a unique frothiness (think Orange Julius) which you can leave out if you choose or substitute with some protein powder or an extra 1/2 cup of yogurt instead. I do recommend buying organic, cage free eggs (bonus if you can get them from a farmers market) for this purpose to help avoid potential issues.

Potato Corn Chowder

This is a delicious, thick, creamy potato chowder that gets bulk without adding a lot of extra calories with boiled cabbage as an ingredient. You don't taste the cabbage but it keeps the calories down and the nutrients up!

This is also a very economical recipe - less than $10 for a giant pot of soup that freezes well and is nutricious and filling.

Creamy Vegan Potato Soup

This is a delicious, creamy, rich potato soup that happens to also be vegan! Would make a great fall meal with a piece of crusty bread. For those who are skeptical - you don't even taste the white beans, they just add some thickener and nutritional value and blend right in to the flavors. Delicious!

Crockpot Ratatouille

A fantastic, easy way to get a big boost of veggies. Use as a topper for pasta, brown rice, or as a delicious stew. Also freezes well!
