Quick and easy. Seems like a lot of calories, but served with a mixed green salad and fruit for dessert, it's a blessing on those hurried week nights.
I cook my black beans in a pressure cooker with jalapenos, garlic, and veggie broth, but if you use canned, drain & rinse them and then saute for a couple of minutes with the garlic and jalapeno. It will make a big taste difference.
A little taste of Africa on those cool nights. Add a freshly baked corn muffin and a mixed green salad to round out a wonderful meal.
This soup is great the day after you make it; thin with water or broth as you reheat, if desired.
A delicious alternative to beef. Excellent with garlic buttermilk mashed potatoes and a mixed green salad.
