No-Guilt Meat and Cheese Lasagna

I love lasagna, but hate feeling over full and like I've blown my diet with all the refined carbs and fatty cheese. This is a pretty good substitute you won't hate yourself for.

Purple Cow Smoothie

I named this after the Purple Cow shakes my mom used to love. It makes a lovely purple breakfast smoothie, it's low in calories and fat, and dairy-free, which is good if you have milk allergies! Great with a whole wheat English muffin or toast for breakfast, or to replace a milk shake with lunch or dinner. (Try it as a nice drink with a Gardenburger...mmmm)
