Chicken Rice Surprise

Got this recipe from a family friend, but switched out some of the ingredients for whole grain alternatives and such. Protein, veggies, and grains, all in one dish! It's currently a work in process to make it healthier, but it just tastes too good not to share.

Couple Notes:
~It is pretty cheesy, so if you're not a big cheese person, I recommend cutting back the amount. (I will be doing this next time)

~ The sodium is higher than I would like (too high), so I'm going to try it next time with a low sodium soup.

~Also, I should note the original recipe calls for two sticks of butter, which I cut down to one, however, I think it could be cut back even more without affecting the recipe. Or maybe try ICBINB?

Any added suggestions would be appreciated. :)

Sonoma Chicken Salad with Flax Seed

The original recipe came from Whole Foods Market, but I tweaked it to make it healthier and a little less fattening. I also drastically cut down the serving size. This recipe makes about 7 - 8 servings, which are more than enough for a meal.
