Spinach, Herb & Walnut Pesto

Cook garlic in butter and olive oil...add chopped herbs and frozen spinach and then walnuts. Then add broth and simmer for a few minutes. Finish in food processor. Put on pasta, crostini, or pizza! Great to get kids to eat spinach.

Chicken & Black Bean Enchiladas

Great for Leftover Chicken!
