If you don't have the Chargrilled Mediterranean Vegetable sauce, try using chopped tomato, or salsa
I prefer starting with raw vegetables, but if you buy frozen mixed bags of cauliflower, carrots and broccoli, you can skip the boiling and just toss all the ingredients together and bake. 5 mins prep time :)
I often make this with raisins and/or walnuts. It is super moist and buying pre-shredded carrots makes this recipe very quick to prepare.
