This yummy, simple white bean soup makes a delicious lunch or starter soup.
Roasted garbanzo beans are easy, fast and delicious. I prefer the coconut oil but you can use olive oil as well. Good on their own but also great on top of a salad.
This lentil soup is delicious for anyone but particularly good for people eating a hypo-allergenic/paleo diet or on the elimination diet. This soup is vegan and is additive free, nightshade free, lactose-free, gluten free, soy free, wheat free and citrus free.
Gingerbread muffins made without eggs, extra sugar and with only a tablespoon of oil making them a great 100 calorie snack. This recipe is adapted from a vegan/flax version that I found here. I always struggle to meet my protein goals and so added a little kick to these muffins with some protein powder and I reduced the fat.
Delicious Thai style fresh spring roll with peanut sauce. Nutrition info includes the peanut sauce and one makes a great snack or appetizer and two or three makes a healthy, filling lunch. I skip the rice noodles to lower the calories, but feel free to add them.
