Put ingredients on bread machine.
135 gr. Sourdough starter, 330 gr. water, 25 gr. honey, 12 gr. sea salt, 18 gr. vital wheat gluten, 235 gr. fresh milled hard red wheat (or a combination of hard red white wheat and hard red), 100 gr. fresh milled rye flour, 130 gr. fresh milled spelt, 100 gr. fresh milled kamut, 7 gr. instant yeast.
I set the machine like: 24 minutes Knead, 40 min. 1st rise, 25 min. 2nd rise and bake for 1 hour.
