Easy Coconut Chicken Soup

This is a quick and easy facsimile of a Tom Ga soup. I had the chicken breast and rice already prepared so this went together in a flash! I am giving the recipe for two, but it is easy enough to double, or halve as you need. You could also use mushrooms or tofu in place of the chicken, or even some shrimp. You could also use prepared

Fall Stuffed Pumpkin

This seems like a lot of time, but you make the stuffing as the shell is pre-cooking. Very much a fall recipe.

Chai Tapioca Pudding

Adapted from Back to Her Roots. Lacto-ovo Vegetarian, but not vegan as I made it.

I used tapioca pearls from the regular market and only soaked them for one half hour. The health food store variety may need an entire hour to soak. You want them soft when squished, but to hold their shape when you stir them.

Instead of ground spices you can tie whole, crushed spices into a cheesecloth bag and fish it out before putting into dishes
