The zucchini makes this really moist and sneaks in some extra vegetables.
My daughter loves tomato-basil soup, and I decided to try making some. I couldn't find a recipe I liked without cream, so I mixed and matched until I came up with this.
I wanted a creamy asparagus soup without the cream, and I remembered once making a recipe that used potato to make it creamy, so I tried that and the result was delicious!
This was my grandmother's recipe, with some additions (mostly vegetables). It's really easy and delicious!
Modified from a recipe found online. Reduced the fat by 50% and the calories by 100 per serving. We loved it!
I got this recipe from my aunt and lightened it up. I like making it in winter with corn bought during the summer and cut off the cobs. The taste reminds me of summer!
I created this one day when I had some extra tomatoes and an urge for spaghetti.
