Quick, Light and Unbelievably Good. This is the old fashioned homemade sweet and sharp mayonnaise my mother used to make. Has a great consistency after it sets in the fridge. All of the pleasure and none of the guilt!

Creamy Brown Rice Pudding (using cooked rice)

I wanted to make a healthy, creamy rice pudding using cooked brown rice (packaged or left over).

Mushroom Soup

I never thought I could make a home made mushroom soup that would be as good as the canned one I love, but I did, and actually it's much better! Real stock makes all the difference. 232 calories. Great for lunch for 2.

Impossible Quiche Lorraine

Like the old Impossible Pie, which was a crustless sweet recipe, this one is a savory version, much like a Quiche Lorraine. It's nice to have with a salad for lunch.

Low calorie, sweet and satisfying...has a light tartness similar to stewed rhubarb...yummy!


An easy sugar-free berry syrup for pancakes or sauce for dessert. It can be made with fresh or frozen berries, in any proportions you like. If you use frozen berries, make sure there is no sugar added.
