Whole wheat Apple streusel muffin

I have this recipe I have been making for years but cleaned it up by adding whole wheat flour, greek yogurt, almond milk and applesauce. Yes there is still a little butter but for 4 grams fat we love it.
This makes 42 regular sized muffins.

Pesto chicken

I adapted this from a recipe from my grandmothers but substituted turkey for the ground beef usually used.

Mels kale salad

I created this dish trying to get my family to eat kale. This goes faster than pasta salad at any meal. This needs to marinate 4-6 hours or overnight
This has your healthy fat and over 50% of vitamin c and 75% of vitamin a for the day.
Serving is aprox 1 cup

Pretzel -crusted Tilapia

This is crunchy and tangy with the mustard. You can switch to Dijon or French yellow but I love the hot and spicy and the mustard keeps the pretzels clinging to the fish.

Grilled brown sugar and bourbon salmon

It is a marinade I got off the back of the package. This is great on steak, chicken and especially shrimp.

Morning power drink

I make this on the morning I go to the gym early or just don't have time for a meal prior to working out.

Tangy Garlic chicken and Tomatoes

This is a super easy, super tasty all in one dish. I serve over brown rice for a Super healthy meal.
