We are vegetarian but still love homemade comfort food (with a kick). My kids also love little muffin-style foods so this is my version of Meatloaf Muffins.
I love succotash but hate okra and tomatoes, so I make my own. Kids even love it with a little extra butter on top.
I love stuffed peppers and pablanos are like a cross between bells and jalapenos so it's perfect for my family. This pepper dish is hearty, nutty, and has a nice kick.

My mother loves tomatoes and so (since I was a child) I have sought new and yummy ways to make stuffed ones for her. Quinoa and spinach stuffed tomatoes that are perfect for Mother's Day, lunch, or as part of a tasty dinner. (And only 160 cals each!)
