This is the Okra recipe I made with fresh veggies from my garden, without added spiciness so the whole family would like. One could garnish their bowl with diced or sliced jalepenos, hot sauce, red pepper or the like if they like it spicy.
This is my variation of a popular version of Ratatouille with ingredients I had on hand and the addition of some instant rice for a nice texture and flavor. This is also good with some cubed smoked sausage browned in a pan.
Spice up your breakfast (or any meal) by making this egg dish with more unique ingredients and earthy, nutty flavor. I used Private Selection Gourmet Blend Mushrooms (Crimini, Shiitake & Oyster Mushrooms) that I found at Kroger.
This lightened version of a creative twist on a favorite makes for a guilt free way to indulge in a nice treat! Ideas for garnish are the traditional nutmeg, lime zest and toasted coconut, or also delicious with pineapple tidbits mixed in (don't forget to add the calories though!)
Almond milk, almond meal flour and applesauce help lower the carbs and calories, and the whole-wheat flour and flax seed add fiber. My twist further reduces calories by using Stevia and Molasses instead of brown sugar for 100 calorie snacks!
I make something similar to this for the kids using butter and more cheese without the carrot and ketchup and only cut off the top 3rd and replace the top while baking. We call them "lid potatoes" from a story we once read. This version is much healthier and gives extra veggie servings. I think they are good!

One of my kids requested I make some baked spaghetti for supper one night and I came up with this. It uses healthy ingredients, just watch portions. This makes A LOT. It is delicious with a salad on the side and the pasta has a full serving of vegetables in each 4oz. Enjoy!
